Coconut Shrimp

Henry‘s family came over on Christmas Day and we had to come up with a menu for dinner. Henry’s suggestion for a dish was coconut shrimp. Now I’ve never made it before so of course I go to Food Network to try to find one. There were about 15 recipes, but I always sort by User Rating to weed out the bad ones or never been tested ones. The ones that catch my eye are Spicy Coconut Shrimp with Spicy Mango Basil Salsa and Lime Jasmine Rice (Dave Lieberman), Coconut Shrimp with Peanut Sauce (Alton Brown) and Coconut Shrimp with Red Curry Sauce (Tyler Florence). I ended up going with Alton Brown’s Coconut Shrimp with Peanut Sauce because we love Alton Brown and his show Good Eats. The shrimp came out delicious but the peanut sauce was just a peanut butter mess. I’m not sure where we went wrong but all I have to say is Henry was handling the sauce. Anyway, if you’re looking to make coconut shrimp, give Alton’s recipe a try.

PS Another good Alton recipe is Good Eats Roast Turkey from the episode called “Romancing the Bird (A Good Eats Thanksgiving).” We’ve made it the last few years for Thanksgiving and haven’t had any problems. He also has a good episode on sushi making called “Wake Up Little Sushi.” We have it on our DVR to use as reference when we’re making sushi.
